Congee!

Congee, the greatest of easy to digest foods. Powerful, filling, and easy on the stomach. Can be sweet, savory, or somewhere in between. Medicinal or just dietary, congee is a tool to have in your kit.

Basic Ingredients:

1 cup of white rice

7-9 cups of water

I like to put in my rice cooker and turn on. When the machine turns off, I have a lovely pot of slightly sticky rice porridge.

Ways to zhuzh it up.

Add any of these items to the pot before cooking.

Savory:

  • Cooked chicken, pulled or diced

  • “Black Fungus”, in thin shreds

  • Lotus seed

  • Goji berry

  • Salt

Breakfast Sweet:

  • Raisins

  • Cinnamon

  • Cardamom

  • Star anise

  • Pinch of salt

  • Topping - Sliced Almonds

Soothing Dessert:

  • Diced Apple (divided)

  • Raisins

  • Cinnamon

  • Nutmeg

  • Cardamom

  • Maple syrup

  • Pinch of salt

Use half of the apple in the cooking pot. Reserve the other half for topping after the congee is ready.
